Mexican Alfredo Pasta

Picture this:

The happiest place on Earth, warm sunlight, long lines, fun rides, and the best Mickey Mouse shaped snacks available. We spent long hours walking around the parks and standing in lines, so we returned to our camper. We needed a meal that was already cooked. Believe us when we tell you, that walking five miles or more each day, you will want a meal that fills you up.

For our Disney trip to Fort Wilderness, we wanted to have meals that would be easy to heat and eat. After a long day of play at the Disney parks; we needed a comfortable, easy meal.

When it comes to comfort food, we love spicy food and pasta. That creamy balance of spicy salsa and green chiles to the creamy Alfredo sauce enrobing the pasta. This recipe combines two of our favorite flavor profiles—Mexican and Italian.
