How to Make Mexican Alfredo Pasta

Mexican Alfredo Pasta

Picture this:

The happiest place on Earth, warm sunlight, long lines, fun rides, and the best Mickey Mouse shaped snacks available. We spent long hours walking around the parks and standing in lines, so we returned to our camper. We needed a meal that was already cooked. Believe us when we tell you, that walking five miles or more each day, you will want a meal that fills you up.

For our Disney trip to Fort Wilderness, we wanted to have meals that would be easy to heat and eat.After a long day of play at the Disney parks; we needed a comfortable, easy meal.

When it comes to comfort food, we love spicy food and pasta. That creamy balance of spicy salsa and green chiles to the creamy Alfredo sauce enrobing the pasta. This recipe combines two of our favorite flavor profiles—Mexican and Italian.

Make and freeze pasta for an easy meal while camping.

Ingredients:

  • 2lbs chicken tenders cubed in 1inch pieces
  • 2TBSP Adobo seasoning
  • 1 TSP Coriander
  • 2TBSP Taco seasoning (KYD Jalapeno Taco Blend)
  • Pepper(to taste)
  • 2 TBSP Cumin
  • 1 cup red salsa
  • 1 can 10oz green chiles
  • 1 12 oz can Rotel
  • 1/4 cup Milk
  • 1 jar (22 oz)Alfredo sauce
  • 2 TBSP olive oil
  • Pasta(cooked about 1lb)
  • Parmesan cheese( sprinkle on top)

Directions:

  1. Cook pasta according to the package directions and drain
  2. Mix spices together (adobo, coriander, taco seasoning, cumin) and coat your chicken pieces
  3. Heat olive oil in a high sided, large skillet on medium heat
  4. Add your chicken and spread chicken evenly in the pan
  5. Add cooked chicken to cooked pasta, get all the dripping from chicken pan
  6. Add your salsa and Alfredo sauce, stir together
  7. Add your milk (tip: add your milk to your Alfredo jar and shake with the lid on to loosen up any leftover sauce
  8. Add Rotel and chiles and mix
  9. Top in with parmesan cheese if desired
  10. Sprinkle taco seasoning (pinch or two) on top

Prep to freeze:

  1. Pan sprayed with non-stick spray
  2. Pour mixture into the pan
  3. Spread the mixture out in the pan
  4. Make sure your meal is completely cool before placing it in the freezer

Reheating Instructions:

  1. Thaw dish in refrigerator overnight
  2. Preheat oven to 400 degree F
  3. Cook until everything is heated through and the internal temperature reaches 165 degrees F about 45 minutes
  4. Let cool for 10 minutes before serving
  5. Suggested side dishes: green salad or fresh fruit
