Easy Prep Camping Meal: Greek Flavored Grilled Sausage and Veggies

I love an easy prep camping meal.

During our camping trip to Jordan Lake State Park in Chatham County, North Carolina, we spent a lot of time outside–fishing, kayaking, swimming, or spending time reading in my favorite camping chair. We have been at Jordan Lake for over fifteen years, and we love that we have access to a state park within an hour drive from where we live. Jordan Lake is an amazing place to relax on the water, and it is known for the large population of Bald Eagles who nest in the trees around the lake.

With all of that time spent outside, we needed an easy prep meal.

For this easy prep meal, I chose veggies that would hold up to higher heats and would pair well with smoked sausages. Once I chose the ingredients, I picked out a flavor profile. This recipe could easily be changed to an Italian or Mexican flavor profile by changing up the spices and types of sausage. I went with a Greek flavor profile because that was what I had in the camper.

Ingredients:

  • 1-2 Green bell peppers
  • 1-2 zucchini
  • 1-2 yellow squash
  • 1-2 tomatoes
  • 2 lbs. smoked sausage(kielbasa or cajun sausage)
  • Bottled Greek Dressing
  • 2 TBSP Garlic powder
  • Feta Cheese

Directions:

  1. Cut your veggies into 1 inch pieces
  2. Cut up your sausage in 1 inch pieces
  3. Pour your dressing over the veggies and add garlic powder
  4. Put your veggies on the flat top grill and spread your veggies out
  5. Add your sausage to the grill
  6. Once the everything is cooked, add the feta cheese on top
