Let’s admit that the first camping meal, especially after you set-up, is hard.
For most camping trips, we camp in our fifth wheel RV, which means backing into the campsite, getting level, plugging the power source, turning on the water–a lot of steps before we can eat. First night meals always need to be the easiest, laziest meal because we are tired and hungry. Hence, we begin with our Lazy Fajitas and Lazy Breakfast Burritos!
These recipes uses all ready cooked ingredients that require little effort. One of the most important rules about being a Lazy RV Cook is that not everything needs to be homemade from scratch–you can use store bought, pre-cooked ingredients to make something delicious.
Lazy Steak Fajitas Recipie:
Ingredients:
- 1 bag pre-cooked steak fajita bag
- 1 can Rotel 1 bag of frozen peppers
- 2-3 TBSP Adobo Seasoning
- 1 TBSP of garlic
- 2 TBSP of cumin
- 1 TSP taco seasoning (KYD Jalapeno Taco Blend)
- Tortilla shells
- Cheese
- Guacamole
- Pre-cooked rice
Directions:
- Oil your flat top grill and heat on medium
- Add your ingredients to the flat top and heat through
- Grill tortillas on the flat top
- Add cheese, salsa, and guacamole
Just like you want an easy dinner, you may want an easy breakfast too…
One way to make your RV cooking easier is to have ingredients that can be used for more than one meal. We like to cook eggs in the morning, so we incorporate some of the same flavors from our Lazy Fajitas into our breakfast–hence, breakfast burritos.
Lazy Breakfast Burritos:
Ingredients:
- 1 lb sausage
- 1/2 onion chopped
- 1 green pepper chopped
- 1 can of diced potatoes
- 6 Eggs
- Cheese
- Tortilla shells
- Salsa
Directions:
- Cook your sausage, onions, green peppers, and potatoes
- Scramble your eggs and pour over your meat and veggies
- Turn your heat down to cook your eggs
- Mix everything up until the eggs are cooked through
- Assemble your burrito with cheese, meat and egg mixture, and salsa
