The Best BBQ Pasta Bake

BBQ Pasta

After another long day at Disney, we wanted another easy to heat and meal. You may have noticed that many of our meals for this trip involve pasta, and no, we are Italian. Going to Disney means that we were walking around each park for many hours. Most of that time, we looped around the line for each ride as we waited for roller coasters(Slinky Dog is my new favorite in Hollywood Studios) or one of the many shows(Country Bears Jamboree is my favorite at Magic Kingdom).

With all of this walking, we needed to replenish our energy for the next day.

If you want to make this recipe, you can, of course, smoke your own BBQ pork(see our linked video in the ingredients), or you can buy premade BBQ from your grocery store. Be aware that some store bought BBQ pork may come with a sauce already, which is fine.

Ingredients:

  • 1 lb smoked pork butt
  • 1 package frozen peppers and onions
  • 2 cans Rotel
  • 1 can cheddar cheese condensed sauce
  • 2 TBSP Cumin
  • 1 32 oz box of chicken stock
  • Hot BBQ sauce to taste
  • 1lb Penne Pasta(cooked according to package directions)
  • Cheddar cheese to cover the pasta

Directions:

  1. Heat oil over medium heat and add pork to pot
  2. Stir occasionally and allow fat from the BBQ to render
  3. Add a drizzle or 2 TBSP of the Hot BBQ sauce
  4. Add the frozen peppers and onions 3/4 of the bag
  5. 2 TSBP cumin to the pork
  6. Add the chicken stock
  7. Add the Rotel and stir to combine
  8. Add the cheddar cheese soup to the pot
  9. Combine cooked pasta to the pot 10. Mix in cheddar cheese if eating right away
